Coconut Energy Bars recipe
This is a recipe that Daisy Bell brought along on the ride from St. Jerome to Montreal.
1/4 cup extra virgin coconut oil
1 1/2 cups semi-sweet chocolate chips
1/2 cup almond butter
1 3/4 cups nuts and/or seeds (almonds, sunflower seeds, pecans...)
1 1/4 cups shredded unsweetened coconut
1 cup quick oats
1 teaspoon vanilla extract
Grease a 9X13- inch baking pan with coconut oil and set aside. Melt the coconut oil in a medium saucepan over medium-low heat, then stir in the chocolate chips, honey, and almond butter. Bring to a low boil stirring constantly for 2 to 3 minutes. Remove from the heat and mix in the nuts, coconut, and oats. Turn into the prepared pan. Spread and press firmly. Allow to cool and cut into bars.
I used olive oil, peanut butter, almonds, pumpkin seeds, sunflower seeds and cranberries. I put the pan in the fridge to cool. Bon appetit!!
P.S. Fits nicely in a handle bar carrier.....
